Hands-on
Phyllo dough is made of tissue-thin layers of pastry dough used in Greek cuisine for both savory and sweet creations. In this hands-on class, Litsa unveils some new recipes from her homeland: Cephalonian meat pie; Politiki zucchini pie; giul borek(a traditional cheese, milk and egg pastry), and galaktoboureko (a Greek custard pie) for dessert.

The hallmark of Mediterranean cuisine is its beautiful dishes using healthful ingredients. Litsa will demonstrate some of her favorite heart-healthy soups, including lentils with peppers and tomatoes; onion soup with Mediterranean herbs and brandy; Mediterranean seafood stew with shrimp and mussels, and orange-scented chickpea soup.

With these simple spreads in your repertoire, you’ll be ready to entertain guests at a moment’s notice. Just bring out the bread and crudités! In this class, Litsa will demonstrate how to make a traditional eggplant dip with tahini; feta and mint spread; a zippy parsley dip; almond dip with sweet peppers, and spicy feta and hot pepper spread.
